West African Peanut Soup

Known as Maafe or by other African names, various peanut soups from simple to elaborate are common throughout Africa and are examples of pureed soups thickened with nuts. They are often eaten as a main course with rice or manioc and can be seasoned with a variety of spices including allspice, cinnamon, coriander, and cumin. Additional garnishes of collard greens, kale, carrots, celery, hot chili peppers, and milk or cream create a hearty soup or stew in the African tradition.

Preparation Method

Step 1 – Sauté Aromatics

  • In a soup pot sauté onion, green pepper, ginger, and garlic in peanut oil until soft

  • Add the diced chicken and continue cooking to color the chicken

  • Add half of the peanuts and season with cayenne, salt and pepper

Step 2 – Add Stock, Sweet Potatoes, and Tomatoes

  • Add the stock, sweet potatoes, and tomatoes and bring to s simmer

  • Simmer until the potatoes are tender

Step 3 – Add Peanut Butter and Adjust Seasoning

  • Stir in the peanut butter and adjust seasoning

  • Garnish with fresh cilantro and toasted peanuts
